A traditional wooden tub used for preparing sushi rice.

Also known as a hangiri, the handai is designed to mix and cool sushi rice. The natural wood surface absorbs excess moisture, helping create glossy, perfectly textured rice—something that cannot be achieved with glass or metal bowls.

This sturdy piece is crafted from thick Kiso sawara cypress sourced from 130-year-old trees in Shinshu, known for its durability and subtle aroma.

Sized for everyday use, it holds up to 3 go of uncooked rice (approximately 1 kg cooked), making it ideal for small gatherings and home use.
